We love all of the aromatic spices that are found in Indian cuisine. This chutney is a fantastic condiment for an Indian meal.
It is very helpful to have a food processor in order to prepare this terrific Indian chutney.
1-½ cups of fresh Mango, cut into chunks and then pulsed in a food processor just a few times to form a somewhat chunky consistency
2 tablespoons of Ginger, freshly grated
2 tablespoons of Vinegar
⅓ cup of Sugar
1 tablespoon of Water
½ teaspoon of Red Chili Powder
1 teaspoon of Garam Masala
¼ teaspoon of Salt
Combine all ingredients together in a saucepan and heat them on a medium heat until they come to a simmer. Once simmering, lower the heat, and continue to cook the ingredients for about 30 minutes more -- stirring periodically so they do not stick to the bottom of the pan. After thirty minutes, remove it from the heat, let it cool and store it in the refrigerator until you are ready to serve the chutney.
