We love using our slow cooker! It makes dinner so easy! This recipe is so simple and delicious, and it takes only a few minutes to prepare and then the slow cooker does all of the work. We enjoy this dish with several of the recipes included on our website such as: Garlic Naan Bread, Basmati Rice with Indian Flavors, either of the two dals that we have included on our website – Chana Dal or Black Lentils' Dal (Makhni Dal), and the Tomato Chutney (and you can access each of these recipes easily by clicking on their respective title).
It is important to have a slow cooker to prepare this wonderful main course recipe.
1-½ pounds of boneless, skinless, Chicken Breast and Chicken Thigh, cut into bite-size pieces
1 whole Tomato, peeled and cut into ⅛-inch pieces
1 whole, sweet Red Onion, finely chopped
2 tablespoons of Tomato Paste
5 Garlic Cloves, minced
1-½ tablespoons of Ginger, freshly grated
2 Serrano Chilies, minced
1 cup of unsweetened Coconut Milk
½ cup of non-fat, plain Greek Yogurt
½ cup of Heavy Cream
½ stick (4 tablespoons) of Butter
2 tablespoons of Garam Masala
2 teaspoons of Turmeric
½ teaspoon of Cumin
1 teaspoon of Salt
½ teaspoon of ground Cardamom
½ teaspoon of ground Indian Red Pepper (or Cayenne Pepper as a substitute)
1 teaspoon of Curry Powder
2 tablespoons of Cilantro, chopped
In the slow cooker, add the yogurt, the coconut milk, and the cream; whisk them together until they are well-integrated. Add the garam masala, the turmeric, the cumin, the salt, the cardamom, the Indian red pepper, and the curry powder. Whisk it until all the seasoning is mixed well into the yogurt-based mixture. Add the tomato, the red onion, the tomato paste, the minced garlic, the ginger, and the serrano chilies, and again whisk them to integrate all ingredients together. Add the chicken pieces, and then add the butter by cutting the butter into small pieces and adding the small pieces around the slow cooker. Mix it with a spoon and then turn the slow cooker on low for 6-6 ½ hours.
Once the Indian Butter Chicken is prepared, the chicken should be tender and delicious. Pour it into a serving bowl, and sprinkle with the cilantro and serve.
