Fruit Salad

Serves: 4-6 servings


No special culinary equipment is needed for this simple recipe.


1 cup of ripe Strawberries, cleaned and sliced

1 cup of fresh Blueberries

1 cup of fresh Pineapple, sliced in half inch cubes

½ cup of fresh, ripe Mango, cut into half-inch cubes

½ cup of fresh, ripe Papaya, cut into half-inch cubes

½ cup of dried Cranberries

1 ripe Navel Orange, peeled and cut into cubes equal to the size of the rest of the fruit

Juice of one Lime

4 or 5 Mint Leaves, cut very fine

2 tablespoons of Cacao Nibs


In a large bowl, cut all of the fresh fruit and mix it together with the dried cranberries and the juice of the lime.   Cute the mint leaves very fine and mix it into the fruit salad along with the cacao nibs.  This fruits salad is great for a brunch with a quiche. We like to serve it with a little lemon curd, and of course along with a nice glass of Vino al Lago Pinot Noir.
