Spicy Thai Salad Dressing and Thai Salad

Using a number of the ingredients from the garden, we love this Thai preparation of salad and dressing!

No special culinary equipment is needed to prepare this Thai salad.


For the Spicy Thai Salad Dressing:


2 cloves of Garlic, minced

¼ cup of Soy Sauce

¼ cup of Rice Wine Vinegar

2 tablespoons of Lime Juice

2 teaspoons of Honey

2 teaspoons of Toasted Sesame Oil

1 tablespoon of Chili Garlic Sauce




2 tablespoons of White Onion, very finely chopped

1 teaspoon of Thai Chili, very finely chopped (or Serrano Chili, if you cannot find Thai Chilis)


For the Thai Salad:


2 cups of Romaine Lettuce, torn into bite-sized pieces

1/3 cup of Carrot, shredded

1/3 cup of Radish, sliced

½ cup of Edamame, shelled

½ cup of Cucumber, sliced and then cut into quarters

½ cup of Red Cabbage, chopped

½ cup of Cherry Tomatoes, quartered

1/3 cup of Green Onions, chopped

½ cup of Yellow Bell Peppers, chopped into ¼-inch pieces

¼ cup of Cilantro, chopped

1 tablespoon of Thai Basil, chopped (standard, Genovese basil can be substituted, if you cannot find Thai Basil)



To Prepare the Spicy Thai Salad Dressing:


Put all ingredients in a bowl and whisk them together until they are fully integrated.  Toss and serve with the Spicy Thai Salad Dressing.


To Prepare the Thai Salad:


In a salad bowl, toss all of the salad ingredients together, and then add the salad dressing. Toss it all together and serve.
