We enjoy growing many items on our property. In this recipe, we have included arugula, garlic, red onion, and green onion – all of them are freshly picked from our garden to produce this great salad.
No special culinary equipment is needed to prepare this terrific salad and its dressing.
For the Yogurt and Blue Cheese Salad Dressing:
½ cup of plain Greek Yogurt
⅓ cup of Sour Cream
½ cup of Blue Cheese, crumbled
2 cloves of Garlic, minced
1 tablespoon of Shallots, minced
¼ cup of White Wine Vinegar
1 Green Onion, finely chopped
Salt & Black Pepper, to taste
For the Arugula Salad:
3 cups of Arugula, torn into bite-size pieces
4 strips of Bacon, cooked crisp in the oven, and chopped once cooled (you can access that recipe by clicking here)
⅓ cup of Blue Cheese, crumbled
1 small Tomato, chopped into ½-inch chunks
¼ cup of Red Onion, coarsely chopped
¼ cup of Carrot, shredded
To Prepare the Yogurt and Blue Cheese Salad Dressing:
Whisk all ingredients together in a bowl.
Serving Suggestion:
It is a thicker dressing, and it is delicious. We enjoy this dressing with this arugula salad, however it would be terrific on a steak salad as well.
To Prepare the Arugula Salad:
Toss all the salad ingredients along with some of the Yogurt and Blue Cheese Salad Dressing.
