One of our favorite steak house restaurants is Mastro’s Steakhouse in Westlake Village, California. Their steaks are wonderful, and we love the spicy “Mambo” salad dressing, which is a delicious dressing that gets its spicy punch from the addition of wasabi. We have created the recipe below so we that we can enjoy a spicy wasabi dressing at home. We really enjoy this salad dressing over a green salad and we serve it with one of our favorite steak recipes -- Steak Fiorentina (to read that recipe, please click here.)
No special culinary equipment is needed for this wonderful salad and dressing.
For the Wasabi Salad Dressing:
3 cloves of Garlic, minced
2 Anchovy Fillets, finely chopped
1-2 tablespoons of Wasabi Paste (Suggestion: Start with 1 tablespoon and add more to make the dressing spicier, if you would like it spicier.)
½ tablespoon of Dijon Mustard
1 tablespoon of Lemon Juice
3 tablespoons of White Wine Vinegar
½ teaspoon of Worcestershire Sauce
3 tablespoons of Mayonnaise
3 tablespoons of Safflower Oil
Salt and freshly ground Black Pepper, to taste
For the Green Salad:
2 cups of Mixed Lettuce Greens (our preference is a mix of Romaine Lettuce with some added mixed green lettuce)
1 cup of Grape Tomatoes, quartered
4 slices of crisp Bacon, chopped (we cook our bacon in the oven, and you can access that recipe by clicking here)
⅓ cup of Green Onion, chopped
⅓ cup of Parmesan Cheese, shaved
1 ripe Avocado, sliced
To Prepare the Wasabi Salad Dressing:
In a bowl, whisk together all the ingredients, except the Safflower Oil, until the ingredients are fully integrated. Slowly whisk in the Safflower Oil. Taste the dressing and add more wasabi, if you would like it spicier. If it is too spicy for you, mix in additional mayonnaise, safflower oil and white wine vinegar, in equal parts. (For example: 1 tablespoon of each at a time and taste the dressing and continue adding these three ingredients in equal parts until the dressing is at the desired level of spiciness.)
To Prepare the Green Salad:
Toss all the ingredients in a bowl, and then add some wasabi salad dressing.
Serving Suggestion:
This is a terrific, spicy dressing and salad that pairs nicely with steak. Enjoy!
