We love this fresh, Greek Salad and Tzatziki Salad Dressing for a slighty lighter salad.
No special equipment is required to prepare this Greek salad and dressing.
For the Tzatziki Salad Dressing:
1 Cucumber, peeled and coarsely shredded
½ cup of plain Greek Yogurt
½ cup of Sour Cream
¼ cup of Lemon Juice
1 clove of Garlic, minced
½ teaspoon of Dill Weed
½ cup of Feta Cheese, crumbled
Salt and Black Pepper, to taste
For the Greek Salad:
¼ pound of Ground Lamb
1 clove of Garlic, minced
2 tablespoons of White Onion, finely chopped
1 teaspoon of Extra-Virgin Olive Oil
1 tablespoon of Lemon Juice
½ teaspoon of Mint, chopped
2 cups of Romaine Lettuce, torn into bite-sized pieces
2 Roma Tomatoes, chopped in small cubes (about 1 cup when chopped)
½ cup of Feta Cheese, crumbled
½ cup of Kalamata Olives, pitted and chopped
1/3 cup of Yellow Bell Peppers, chopped in ½-inch pieces
1/3 cup of Red Onion, finely chopped
½ cup of Cucumber, sliced and quartered
1/3 cup of Golden Greek Pepperoncini, chopped
½ cup of Baked Pita Chips, broken into bite size pieces. We enjoy lemon herb, but you may substitute any pita chip that you enjoy.
To Prepare the Tzatziki Salad Dressing:
Put all the ingredients in a food processor and pulse them until they are fully integrated.
To Prepare the Greek Salad:
In a skillet, heat the olive oil and add the garlic as well as the white onion. Sauté until the garlic and onion are translucent. Add the lamb to the skillet, and sauté them until the lamb is fully cooked. Remove the lamb from the heat.
Once the lamb has cooled, put the lamb into a bowl and add the lemon juice and sprinkle it with the mint.
In a salad bowl, mix all the other, salad ingredients and toss them together. Add the lamb and the salad dressing and toss them together before it is served.
