We enjoy lamb and we particularly enjoy this sweet and sour mint sauce with our lamb, no matter if it is lamb chops, or Rack of Lamb (and you can easily access that wonderful recipe by clicking on that recipe title).
No special culinary equipment is needed to prepare this terrific mint sauce.
⅓ cup of Mint Jelly
¼ cup of Cider Vinegar
⅓ – ½ cup of fresh Mint, finely chopped, to taste
½ teaspoon of Salt
¼ teaspoon of Black Pepper, freshly ground
2 tablespoons of Cornstarch
2 tablespoons of Water
In a saucepan, place all the ingredients, except the cornstarch and water. Bring the liquid to a boil and then reduce the heat on it and cook it for about 3-5 minutes. In a small bowl, mix the cornstarch and the water and then slowly add this to the saucepan, continuing to cook it and stirring it until the sauce becomes thick. Then, remove it from heat and serve it alongside your favorite lamb recipes.
