This is a terrific salad with a wonderful Thai flair to it from the peanut salad dressing!
No special culinary equipment is needed to prepare this wonderful Thai green salad.
For the Peanut Salad Dressing:
¼ cup of Creamy Peanut Butter
2 tablespoons of Lime Juice
2 tablespoons of Soy Sauce
2 tablespoons of Rice Wine Vinegar
2 tablespoons of Honey
3 tablespoons of Toasted Sesame Oil
2 cloves of Garlic, minced
1 teaspoon of Ginger, freshly chopped
¼ teaspoon of Crushed Red Pepper
For the Green Salad:
2 cups of Napa Cabbage, torn into bite-size pieces
1 cup of Red Cabbage, torn into bite-size pieces
1 cup of Carrots, shredded
½ cup of English Cucumber, sliced and then cut into quarters
1 cup of Cherry Tomatoes, sliced in half
1 cup of Edamame, cooked and shelled
3 scallions, finely chopped (including white and green parts)
¼ cup of Cilantro, coarsely chopped
To Prepare the Peanut Salad Dressing:
Whisk all ingredients together and pour the dressing into a salad dressing container. Shake the dressing well immediately prior to serving.
To Prepare the Green Salad:
Toss all the salad ingredients together in a salad bowl, and then add the salad dressing. Toss the salad to mix the dressing consistently through it and serve.
