We grow many of our vegetables and this year we have a wonderful crop of red onions. They are sweet and mild, and they are great in this salad and salad dressing.
No special culinary equipment is needed to prepare this BLTA salad and dressing.
For the Onion Dressing:
¼ cup of sweet Red Onion, finely chopped (Note: any sweet onion can be used in this recipe.)
¼ cup of Cider Vinegar
1 tablespoon of Honey
1 tablespoon of Dijon Mustard
2 tablespoons of Extra Virgin Olive Oil
Salt and Black Pepper, freshly ground, to taste (about ¼ teaspoon of each)
For the BLTA Salad:
3 cups of Romaine Lettuce, torn into bite-size pieces
1 cup of Cherry Tomatoes, sliced in half
5 slices of Bacon, Cooked in the Oven (to access this recipe, click here), cut into bite-sized pieces
¼ cup of Red Onion, finely chopped
½ cup of Giardiniera in vinegar, chopped in about ¼-inch chunks
Half of an Avocado, sliced
To Prepare the Onion Salad Dressing with a BLT and Avocado Salad
Whisk all the dressing ingredients together in a bowl, and then pour into a salad dressing container.
Toss all the salad ingredients together to produce this wonderful bacon, lettuce, tomato and avocado salad, and then add the dressing when you are ready to serve it.
