Korean cuisine is one of our favorites, and this is one of our favorite Koren salads with a distinctive salad dressing.
No special culinary equipment is needed to make this wonderful Korean salad.
For the Kimchi Salad Dressing:
¼ cup of Kimchi (if you want to make your own Kimchi here is the recipe, which you can access by clicking here, or you can use Kimchi that you purchased)
¼ cup of Rice Vinegar
3 cloves of Garlic, minced
2 tablespoons Safflower Oil
2 teaspoons of Sesame Oil
½ teaspoon of Granulated Sugar
½ teaspoon of fresh Ginger, grated
1 Green Onion, julienned
1 tablespoon of Cilantro, chopped
1 teaspoon of Red Pepper Powder, if desired
For the Napa Cabbage Salad with Kimchi Dressing:
¼ of a Napa Cabbage, cut in 1/2-inch pieces (about 2 to 3 cups)
3 tablespoons of Cilantro, chopped
¼ cup of Green Onion, chopped
To Prepare the Kimchi Salad Dressing:
Put all of the ingredients except the green onion and cilantro into a blender, and whiz down until smooth. In a bowl pour the mixture from the blender and add the green onion and cilantro and stir. Place into a salad dressing container and set aside.
To Prepare the Napa Cabbage Salad with Kimchi Salad Dressing:
Mix the cabbage, green onion and cilantro in a bowl and serve with the Kimchi Salad Dressing and a side of Kimchi (to access that recipe, click here).
Serving Suggestion:
This is terrific with the Beef Bulgogi, Korean-Style.
