A great salad dressing for a great, authentic Caesar's Salad.

Ingredients

For the Caesar's Salad Dressing:


4 cloves Garlic, minced and mashed
3 Anchovy Fillets, mashed
1 tablespoon White Wine Vinegar
3 tablespoons Mustard/Mayonnaise Sauce (see separate recipe on the website)
½ cup Olive Oil
1 ½ tablespoons Lemon Juice
Dash of Worcestershire Sauce
Dash of Hot Sauce (Tobasco or similar)
1 teaspoon Salt
1 ½ teaspoon Black Pepper, freshly ground

Directions

Caesar's Salad Dressing:
In a bowl, using a wooden spoon, mash the garlic, anchovies and salt to a fine paste.  Stir in the mustard/mayonnaise and whisk until thick.  Once the mixture has thickened, add the lemon juice and vinegar slowly and continue whisking the entire time.  Then slowly add the olive oil – whisking the entire time.  Add the Worcestershire sauce, hot sauce and black pepper and whisk.  Refrigerate the dressing at this point.
